Light and fluffy banana donut holes, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut hole pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the melted butter, eggs, and vanilla extract; mix well.
  4. In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Fill each donut hole cavity about 2/3 full with the batter.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before removing from the pan.

Notes

  • Store leftover donut holes in an airtight container.
  • For added sweetness, roll the donut holes in cinnamon sugar while still warm.
