A delicious and comforting fire roasted tomato soup perfect for any day.

Ingredients

  • 2 pounds fire roasted tomatoes
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in the fire roasted tomatoes, vegetable broth, salt, pepper, and sugar.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  5. Using an immersion blender, puree the soup until smooth.
  6. Stir in the fresh basil and serve hot.

Notes

  • This soup can be frozen for up to 3 months.
  • Try adding a splash of cream for richness.
