A quick and easy one-pot dish featuring spinach and tomatoes, perfect for a weeknight dinner.

  • 2 cups fresh spinach
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute.
