- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 4 large egg whites
- 1/4 cup granulated sugar (for meringue)
- 1/4 teaspoon cream of tartar
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add flour, eggs, lemon juice, lemon zest, and salt; mix until well combined.
- Pour filling over the crust and bake for 50-60 minutes, or until set.
- While cheesecake cools, whip egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
- Spread meringue over the cheesecake and bake for an additional 10-15 minutes until golden brown.
- Let cool completely and refrigerate before serving.
