A delicious and refreshing dessert that combines the tangy flavors of lemon with a creamy cheesecake base topped with fluffy meringue.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 4 large egg whites
  • 1/4 cup granulated sugar (for meringue)
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add flour, eggs, lemon juice, lemon zest, and salt; mix until well combined.
  4. Pour filling over the crust and bake for 50-60 minutes, or until set.
  5. While cheesecake cools, whip egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  6. Spread meringue over the cheesecake and bake for an additional 10-15 minutes until golden brown.
  7. Let cool completely and refrigerate before serving.

Notes

  • Make sure all ingredients are at room temperature for best results.
  • Chill the cheesecake overnight for a firmer texture.
  • Serve with additional lemon zest on top for garnish.
